As the most widely consumed beverage in the world, coffee is our passion. Coffee is said to have first been discovered hundreds of years ago by Ethiopian goat herders. The goat herders observed the oddly hyper behavior of goats that had recently consumed cherries from what are now known to be coffee plants. Interested by the goats peculiar reaction, the herders began trying the cherries. They soon discovered that the magic was actually in the seeds and not the fruit itself. They learned ways to roast and steep the seeds in water. Over the years this process has been refined and has become the beverage that millions of people throughout the world enjoy today.

WHAT IS COFFEE?
Coffee starts as a seed in a cherry which grows best near the equator. There are two main species used - Arabicas and Robustas. Robustas produces a seed high in caffeine but not very flavorful. Arabicas, grown at higher altitudes, produce seeds of the highest quality with tremendous flavor potential. They are more expensive and harder to cultivate. At Javatinis we only use the finest Arabicas from around the world.

Coffee cherries will not continue to ripen once picked so they must be picked by people and not machines. The careful eye of the pickers scan the trees for cherries at the peek of perfection. Once the ripened cherries are picked the must be transported, usually by mule and sometimes by back to the farms where they’ll be processed. Once the seeds, usually two per cherry, washed clean they must be set out to dry. This usually happens on large clay or dirt patios. The seeds must be raked regularly to ensure they dry evenly. Once they are adequately dried they are then sorted by size and quality, bagged and sold to coffee buyers. Coffee which comes from different parts of the world will often have unique flavor profiles. We are always sampling coffees from around the world to bring our customers the finest coffees available.

ROASTING LEVELS
The roasting process also affects the final flavor. There are many degrees of roasting from very light to extremely dark each with its own consequence. Certain coffees respond best at different levels of roast, though we at Javatinis feel individual taste is subjective and since we operate a small batch roaster we can offer our customers an individual roast level based on their own taste. We can recommend a roast level for a particular coffee or blend of coffees but will always encourage you to experiment and see what you like.

ROASTED DAILY
Our coffees are roasted daily in small batches, because it makes a difference. The average age of our roasted coffee is measured in hours, not days or (heaven forbid) weeks. Would you ever buy a bagel or doughnut that was several days or even weeks old? Most coffee purchased, even at gourmet coffee shops, has been on their shelves for over a week. Unless you are buying your coffee directly from a small batch roaster like us...at best, the coffee you are paying for is several days old and at worst several months old. So come on in and have a cup or buy a pound of coffee that was roasted just hours ago. In fact you can even order a custom blend and we’ll roast it for you at no extra cost. You can even watch as we roast your beans in our glass roasting chamber and in less than 20 minutes, you'll have the finest beans suited to your taste.
